I'd just guess it's based on the pigmentation/size of the eyes. The larger/redder the eyes, the more red liquid.So why is more prevalent in the files over there? I can't recall killing a fly in the states and seeing red liquid. This is actually something my coworkers and I wondered about so I guess you can solve the mystery...lol.
You should start a thread where posters come in and ask you ? , not personal, but things that people of average intelligence wonder about. I'm sure it would be a hit, I have all types of questions about random ? .

comparing an Iraq fly to any other is like comparing Inspector Gadget to Sherlock Holmes .
The only other flies in my experience that come close are the ones in Kuwait and Germany.
But even they don't match the pure ferociousness and aggression of Iraqi flies. Who are all but impervious to pain and fear.
Try to spat them with anything less than your full might and you have a long battle ahead of you
